For the ratatouille, 1/4 cup olive oil, 2 onions diced, 3 bell peppers, cut into one inch square, 2 eggplants, cut into 1/2 inch cubes, 2 zucchini, cut into 1/2 inch cubes, 4 cloves garlic, minced or crushed, 2 pounds tomatoes chopped, 1 tablespoon minced fresh thyme, 1 tablespoon minced fresh thyme and basil, salt and pepper, 1 sachet tomato paste, 1/4 cup water. Saute all veggies in olive oi. Put tomato paste and water. sprinkle with salt and pepper. then add the thyme and basil. Set aside.. Top the ratatouille in pizza dough.Add cheese of desired. (I chose mozarella) Bake the pizza.. That's it!
